<span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 12px;">Tomato and cucumber salad - one of my favorites. Cool, refreshing and that bite of vinegar! Never before has it had a kick, though and this one fits the bill. Quite colorful and inviting for the eyes as well, this salad was a huge hit at our barbecue yesterday and I was thrilled to have a little bit to bring home for lunch today. Don't let it sit for too long as the tomatoes will turn to mush, but I don't think it will last very long - it'll be devoured.</span></span><br />

<span style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Who doesn't love Oreos? The best of both worlds - vanilla and chocolate all in one cookie. Whether you eat it straight up, or split it apart and eat it in pieces, it's America's cookie.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 12px;">They keep churning our imitations and fancy new variations (cookie dough was a travesty), but you cannot mess with the classic Oreo. I'll even take a Double Stuff once in a while.</span></span><br />

<span style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;">So I've turned it into the ultimate decadence - a cupcake with more Oreo than you may be able to stand.</span><br />

<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Line the wells of two cupcake pans with 24 paper liners. Place an Oreo halve in the bottom of each liner, cream side up. </span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;"><br /></span>
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">In a medium bowl, combine the flour, baking powder and salt; stir together with a fork to blend and set aside. In the bowl of an electric mixer, combine the butter and sugar and beat together on medium-high speed until light and fluffy, about 2 minutes. Blend in the egg whites one at a time, beating well after each addition. </span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;"><br /></span>
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Blend in the vanilla extract. With the mixer on low speed, beat in half of the dry ingredients just until incorporated. Add the milk and beat just until combined, then mix in the remaining dry ingredients. Gently fold in the chopped Oreos with a rubber spatula until evenly incorporated, being careful not to over-mix. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Evenly divide the batter between the prepared cupcake liners. Bake for 18 to 22 minutes, rotating the pans halfway through baking, until a toothpick inserted in the center comes out clean. Allow to cool in the pans 5 to 10 minutes, then transfer to a wire rack to cool completely. </span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;"><br /></span>

<b style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Directions:</b><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Combine the cream cheese and butter in the bowl of an electric mixer and beat on medium-high speed until smooth, about 1 minute. Blend in the vanilla extract. Beat in the confectioners’ sugar until incorporated and smooth, 1 to 2 minutes. Add the heavy cream to the bowl and beat on medium-low speed just until incorporated, then increase the speed to medium-high and whip for 4 minutes until light and fluffy, scraping down the sides of the bowl as needed.</span><br />

<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">*If you like, fold in the cookie crumbs (instead of sprinkling on top of the cupcakes) to make a true cookies and cream frosting.</span>

<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">In a saute pan over medium heat add oil, heat and garlic. <div style="font-family: Arial, Helvetica, sans-serif; font-size: 12px; padding: 5px 0px;">
<b>Tools Needed:</b><a href="http://www.amazon.com/gp/product/B000FCD118/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B000FCD118&linkCode=as2&tag=silserche-20&linkId=RGB3KHFKWLFTIH3F" id="static_txt_preview" style="background-color: white; color: #996633; font-family: Verdana, Arial, Helvetica, sans-serif; font-size: 13px; text-align: center;" target="_blank">Wilton Recipe Right 13 x 9 Oblong Pan with Cover</a></div>
<div style="font-family: Arial, Helvetica, sans-serif; font-size: 12px; padding: 5px 0px;">
<b>Directions:</b><span style="background-color: white;"> </span><br />
<span style="background-color: white;">Preheat oven to 350 degrees. Butter and lightly flour a 13 x 9-inch glass baking dish. </span><br />
<br />
<span style="background-color: white;">Melt chocolate and butter in the microwave or on top of a double boiler. Let cool to room temperature. If you are in a hurry, you can quickly cool the mixture in the refrigerator, but be sure it doesn't get solid again. </span><br />
<br />
<span style="background-color: white;">Beat the eggs, sugar and salt in a mixing bowl until very fluffy; add vanilla and mix to combine. Fold in the cooled chocolate mixture. Add the flour and fold just until blended. Carefully stir in the walnuts. (it is important to fold in chocolate, flour and nuts gently to keep the batter as fluffy as possible). </span></div>
<div style="font-family: Arial, Helvetica, sans-serif; font-size: 12px; padding: 5px 0px;">
<span style="background-color: white;">Pour the batter into the prepared pan and smooth the top. Bake for 25 to 35 minutes. Let cool in pan completely before cutting. </span></div>

<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;"><br /></span>
<b style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Directions:</b><span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;"> </span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Heat the oven to 325 degrees (or a convection oven to 300 degrees). </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Season the short ribs all over with salt and pepper. Heat 2 tablespoons olive oil in a deep, heavy-based Dutch oven or similar pot over medium-high heat. Add the ribs - in 2 batches if they don't fit in the pot in a single layer - and sear on all sides until well-browned all over. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Remove the short ribs, wipe out the pan, and add more oil to coat the pan. Add the carrot, celery, onion, and garlic to the pot, and cook over medium heat, stirring occasionally, until nicely browned, 6 to 8 minutes. Add the red wine and the vinegar and cook, stirring and scraping up the bits stuck to the bottom of the pan, until the liquid is reduced by half. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Add the tomatoes, Chicken Reduction, thyme, and rosemary. Return the short ribs to the pot, bring the liquid to a boil, cover, and transfer to the oven. Cook, turning ribs once, until the ribs are fork-tender and the meat is just barely clinging to the bone, 2 1/2 to 3 hours. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Remove the ribs from the cooking liquid, then strain and reserve the liquid. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Use a large spoon or ladle to remove as much of the clear fat floating on top of the cooking liquid as possible. (If you are making the ribs ahead, you can remove the fat more easily once the cooking liquid has cooled. Refrigerate the ribs in their cooking liquid, and then remove the hardened fat from the top.) Cook the defatted sauce over medium-high heat until it has reduced somewhat, becoming thicker and more flavorful. (The ribs can be made 2 days ahead; let cool to room temperature, and then cover and refrigerate the ribs in the braising liquid. Reheat gently to serve.) </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Reheat the ribs in the reduced braising liquid in a 300 degree oven (325 for a conventional oven).</span>

<b style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Directions:</b><span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;"> </span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Bring a medium saucepan of salted water to a boil. Add the farro, lower the heat to a gentle boil, and cook until chewy but no longer hard, about 15 minutes. Drain and spread the farro out on a rimmed baking sheet to cool evenly. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Heat 1 tablespoon olive oil in a medium sauté pan over medium-high heat. Add the carrots and season with salt and a pinch of crushed red pepper. Cook, stirring, for 1 minute, then add the squash and zucchini. Season again and cook, adding additional oil, if needed and stirring, until the vegetables are just tender, about 2 minutes. Remove from the heat and reserve. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">In a medium saucepan, heat 2 tablespoons olive oil over medium-high heat. Add the farro and 1/2 cup of the stock and bring to a boil, stirring, until the broth is almost completely absorbed, about 4 minutes. (Do not let the pot become completely dry.) Add another 1/2 cup stock, stirring, until the pan is almost dry. Season with a little salt, then add the remaining 1/2 cup stock and the sautéed vegetables. Cook, stirring, for 2 minutes. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">Take the pan off the heat and stir in the butter. Add the cheese and stir, shaking the pan to help release the starch. Season with salt, a tiny pinch of crushed red pepper, and a few grinds of black pepper. Cover the pot and let sit for 5 minutes. Stir in the tomatoes and scallions and season to taste. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 12px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">To serve, spoon onto plates, top with short ribs and ladle braising liquid over the top.</span>

<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Adjust oven rack to lower-middle position and heat oven to 350 degrees. Spray 9-inch-square baking pan with nonstick cooking spray. Fold two 16-inch pieces of foil lengthwise to measure 8 inches wide. Fit one sheet in bottom of greased pan, pushing it into corners and up sides of pan (overhang will help in removal of baked squares). Fit second sheet in pan in same manner, perpendicular to first sheet. Spray foil with nonstick cooking spray. </span><br />

<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Transfer 2/3 of mixture to prepared pan and use hands to press crumbs evenly into bottom. Bake until starting to brown, about 20 minutes. Using rubber spatula, spread preserves evenly over hot bottom crust; sprinkle remaining oat/nut mixture evenly over preserves. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Bake until preserves bubble around edges and top is golden brown, about 30 minutes, rotating pan from front to back halfway through baking time. Cool on wire rack to room temperature, about 1 1/2 hours, then remove from pan using foil handles. Cut into 1 1/4- to 1 1/2-inch squares and serve.</span><br />

<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;"><br /></span>
<b style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Directions:</b><span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;"> </span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Line two baking sheets with Macaron mats; set aside. Fit a large pastry bag with a 1/2-inch (size 6) plain tip; set aside. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Place the powdered sugar, almond flour, cocoa powder, and salt in a food processor fitted with a blade attachment and pulse 4 to 5 times to aerate. Process until fine and combined, about 1 minutes. Sift through a flour sifter into a large bowl; set aside. </span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;"><b><i><br /></i></b></span>
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;"><b><i>Note: </i></b>you will most likely have bits of almond left behind in your sieve - no worries. Just toss these (or eat them like my niece and sister in law did)</span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Make a meringue by placing the egg whites in the clean bowl of a stand mixer fitted with a whisk attachment. Beat on medium speed until opaque and foamy, about 30 seconds. Add the cream of tartar, increase the speed to medium high, and beat until the egg whites are white in color and you see trains from the beaters, about 1 minute. Continue to beat, slowly adding the granulated sugar, until the sugar is combined, the peaks are stiff, and the whites are shiny, about 1 minute more. (Do not overwhip.) Transfer the meringue to a large bowl. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Using a rubber spatula, gently fold the dry mixture into the egg whites in multiple small batches until the dry ingredients are just combined. (The meringue will deflate.) With the final addition, stop folding when there are no traces of egg whites, the mixture runs like slow-moving lava, and it looks like cake batter. (Do not overmix.) </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Transfer the batter to the pastry bag. Pipe out 1-1/4-inch rounds about 1 inch apart onto the baking sheets, about 25 per sheet. Pick up the baking sheets and bang them against the work surface to remove air bubbles. Let the rounds sit at room temperature for 30 minutes to dry the tops and ensure even cooking. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Heat the oven to 350 degrees and arrange a rack in the middle of the oven. Bake the macarons for 7 minutes. Rotate the sheets and cook for 7 minutes more. Transfer the sheet to a rack to cool completely.</span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;"><br /></span>

<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">6 Ounce(wt)s chocolate, baking, bittersweet (</span><span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">finely chopped)</span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">3/4 Cup cream, heavy</span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">3 Tbls butter, unsalted (</span><span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;">at room temperature cut in cubes)</span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 12px;"><br /></span>
<b style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Directions:</b><br />
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 11.818181991577148px;">Place the chopped chocolate and butter in a 4-cup pyrex measuring cup. Place in the microwave for 1 minute. Remove and whisk. If mostly melted, continue to whisk until completely melted. If only </span><span style="font-size: 12px;">partially</span><span style="font-size: 11.818181991577148px;"> melted, then nuke for 15 more seconds. </span></span></span><br />
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 11.818181991577148px;"><b><i><br /></i></b></span></span></span>
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 11.818181991577148px;"><b><i>Note:</i></b> You do NOT want to overheat as it will break the chocolate. You want to get the chocolate mostly melted and then use the heat in the chocolate and butter and the friction of whisking to finish the job.</span></span></span><br />
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 11.818181991577148px;"><br /></span></span></span>
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 11.818181991577148px;">Slowly add the cream and continue to whisk until all of it has been incorporated and the ganache is smooth and creamy. Let set for 10 to 15 minutes (but not until all the way solid). </span></span></span><br />
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 11.818181991577148px;"><br /></span></span></span>
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 11.818181991577148px;">Scoop dollops onto the flat side of one macaron. Top with another macaron (like a sandwich/Oreo) and lightly press so the ganache is pushed out to the edges. Set macaron on a plate or in an airtight container.</span></span></span><br />
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 11.818181991577148px;"><br /></span></span></span>
<span style="background-color: white;"><span style="font-family: Arial, Helvetica, sans-serif;"><span style="font-size: 11.818181991577148px;">Store in an airtight container and keep in the fridge. </span></span></span><br />

<b style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Directions:</b><span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;"> </span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">To make the sauce: </span><br />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the béchamel sauce. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Preheat the oven to 450 degrees. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Add a tablespoon or two of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Butter a 13-by-9-by-2-inch glass baking dish. Pour the béchamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, and then, using the cookie scoop, dish the ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the béchamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. </span><br />
<br style="font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;" />
<span style="background-color: white; font-family: Arial, Helvetica, sans-serif; font-size: 11.818181991577148px;">Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.</span>
